Extremely Easy Lentil Soup

Last night, I was too tired to get very creative in the kitchen and we'd had such a busy weekend that we hadn't gone grocery shopping, either. I've also been hoping that autumn will hurry up and get here, so in my eagerness for fall weather I made a quick-and-easy lentil soup.  

Lentil Soup
1 onion, diced
4 garlic cloves, minced (I like garlic!)
1 tsp basil
dash of cumin
1 bay leaf
olive oil for bottom of soup pot
1 cup lentils (I had red lentils on hand)
4 cups water
salt and pepper to taste

That's it!!!  You cook the onion and garlic with the herbs and olive oil until translucent and fragrant. Add the water and lentils, bring to a boil, then let simmer until well cooked (about 45 minutes).  Salt and pepper to taste.  I also added a splash of balsamic vinegar which I saw suggested in a recipe online.  I loved it!

You could also add carrots, celery, tomatoes, etc. if you have other veggies on hand.

  1. Kathryn, It looks so yummy! And you don't like garlic as much as I do. When cooking for myself I tend to add a whole head. I LOVE garlic.

    1. LOL! ;-) Glad to find a fellow garlic lover out there.

      I forgot to mention in my initial post that I also added a splash of balsamic vinegar when I served this. It was really good! I'd never tried that with lentil soup before.

  2. Too much garlic for me! lol Fall has arrived in Iowa, so I'll be getting out the crockpot pretty soon. And, I can fire up the oven, too.

  3. I'm so jealous it's already fall there, Jeannette! :-) It's perhaps my favorite season. We tend to have short autumns here--looong summers and then before we know it, winter comes. But, I enjoy every moment of them. Do you get pretty fall foliage where you are?
